Mexican Casserole

This is by far my most favorite mexican casserole.  I can keep eating it over and over again.

Ole!  Mexican is one of our favorite cuisines in this apartment.  Too bad it’s not ALL low carb.  I love beans, salsa, chips, did I mention queso!!!  I love queso!

Mexican CasseroleThis recipe is right on the money when it comes to flavor!  You can choose the heat with whatever salsa you decide to get.  In our place, the hotter the better.  Mild is for weak taste buds.  Ha!

Brown the ground beef with onions and garlic until fully cooked.  Add in the taco seasoning mix.  Stir together.  When fully cooked and mixed pour into a square casserole dish and let sit for 5-10 minutes.

Spread softened cream cheese on the top making sure that it is all spread evenly over the meat.  Sprinkle shredded cheese on top.  Add diced tomatoes and lettuce over the cheese.  Finally add the salsa or taco sauce.  Refrigerate leftovers.

serves 5-6

1 pound ground beef or ground turkey

1 1.24 ounce packet of taco seasoning

1/2 medium onion

2 cloves of garlic

4 ounces cream cheese (softened)

chopped tomato

chopped lettuce

shredded cheese

salsa or taco sauce

6 net carbs per serving
