Oh blueberries!  I just love blueberries!!!  I love them in the morning, and in the afternoon, I love them in the evening and underneath the moon!  I mean – wait!  What?!

I do really love just walking to the fridge and getting a handful of blueberries for a snack and to satisfy my sweet tooth (which is a very LARGE tooth might I add).  I like to take them to work too so I don’t wander off into the “goodies” cabinet.  Yes, we have one and I am the one who supplies it with all the goodness.  So go figure.

Just wait till this recipe fills your entire place with the fragrance of awesome..  Trust me it will smell of goodness. So here is an easy blueberry coffee cake with cream cheese recipe.  Oh, and it’s low carb!!!  I have found substituting the blueberries with raspberries works amazingly well too.

This is a three step process.

To make the streusel topping mix almond meal, cinnamon, granular sugar, salt and the butter.  You will want this mixture to be crumbly.  You can use a pastry blender, a knife or your hands.

Mix cream cheese, egg, and sweetener to start the creamy layer.

Now for the cake layer, mix the other 2 cups of almond meal, baking powder, baking soda, 1/2 tsp cinnamon, 1 tsp salt and 3/4 cup erythritol (powdered)

Now to put it all together.  Spread the cake layer into the pan making sure it’s even.  Add the cream cheese mixture right on top and smooth as best as you can.  It’s ok that you won’t be able to spread it evenly.  Then sprinkle the blueberries atop of the cream cheese.  Finally sprinkle the streusel (my favorite part) on top of the blueberries.  Place in 350F oven and bake for 30-35 minutes.  Use the toothpick method to check for doneness in the middle of the cake.

3 cups almond meal / flour

1 1/2 cups erythitol (powdered)

3 eggs

1 teaspoon baking powder

1 teaspoon baking soda

1/2 cinnamon

1/2 cup butter (4 Tablespoons), chilled and cut into small pieces

1/2 cup sour cream

1 teaspoon vanilla extract

1 teaspoon almond extract

2 Tablespoons oil

8 oz cream cheese

salt

1 cup fresh or frozen blueberries (raspberries)

1.5 net carbs per serving

My boyfriend and I could hardly wait to sink our teeth into these.  They scented the entire apartment, much less the whole floor of our building.  He even had one before he went to bed that night.
