Baked Eggs

Here is a hard to resist baked eggs recipe everyone can enjoy!

Last winter in the frigid cold my honey darling and I were moving him into the city and while in the madness of donating numerous items we became very hungry (this happens a lot with us).  So we walked into this cute little café to get warm and drink some coffee.  Low and behold baked eggs were on the menu.  Now I had never heard of such a thing.  I was actually on the fence about ordering them until I saw some walk by me.  I was like OH YES PLEASE!  I cannot describe the goodness that I tasted.  We were both in agreement that we had been missing out all this time.

So with those in mind (which I’m sure were not as low carb as this recipe is) here is my rendition of these glorious oven baked eggs .

Preheat the oven to 400ºF.  Lightly coat each cup of a standard-sized nonstick muffin pan with cooking spray.

Baked Eggs

Cut the turkey bacon in half and line each muffin cup with one half piece.  There will probably be a little excess extending from the top of each cup.  Spoon 1 tablespoon of the salsa.

Crack egg right over the salsa.  Use a fork to break the yolk just a bit.  Place the muffin pan in the oven and bake for 15-17 minutes, or until the eggs are puffed and the center is set.  You can also opt for leaving out the yolk for a lower cholesterol intake.

Carefully remove the baked eggs from the pan and place 2 egg cups on each serving plate.  Garnish with the cheddar cheese and a few more slices of BACON and enjoy!

Servings 4

2 slices of turkey bacon

1/2 cup salsa

4 large eggs

2 tablespoons grated low-fat Cheddar cheese

2 grams of carbs each
